Menu Plan Monday


Happy Monday!
Hope the weekend was great!

I'm already on my 2nd week and feeling great!  I need to keep this up!

I love that menu planning can be flexible.  If we don't feel like eating what we have planned for a particular day, we can change it up with one of the other days!


Here's what we have cooking in our kitchen this week:
Monday:  Roasted Spaghetti Squash with Kale - We have been wanting to make Spaghetti Squash at home for awhile now.  Excited to try this.  I'm a huge fan of Ree Drummond (Aka the Pioneer Woman).

Tuesday: Crock Pot Balsamic Pork & Sweet Potatoes - New Recipe that I thought I'd try! Found this on the skinnytaste.com website.  There are seriously so many great recipes on there!

Wednesday: Sesame and Peanut Noodles - I think I've shared this recipe before on my blog.  It's pretty amazing.  It's also so good the next day for leftovers.  Not sure if you ever watch Melissa d' Arabian's show on Food Network called "10 Dollar Dinners" but you should!

Thursday: Chicken Fajitas -  LOVE me some Chicken Fajitas!  We do ours pretty basic.  Chicken sauteed with a red pepper, green pepper and some onion.  We buy the Tortilla Land Fresh Flour Tortillas.  SO.GOOD.  These tortillas do go bad sooner than regular tortillas if you don't use them all up.  If we don't use them for breakfast burritos on the weekend, we use them for a simple dessert that I'll share...warm up one of these tortillas, put a little butter over the whole tortilla, sprinkle a little cinnamon sugar on top, roll it up and viola!  Such a good little dessert!  ;)

Friday: Pizza or leftovers!  


I seriously get excited planning out meals for the week, it's so much fun!  It helps if you  LOVE to cook.

Five on Friday!

We don't really have any plans for the weekend, other than relaxing.  Apparently we're boring.  :)

ONE

Since Valentine's Day is right around the corner, I had to put a little Valentine doodle on my chalkboard!




TWO

Totally obsessed with this Chevron Infiniti Scarf that I keep eyeing up at Francesca's.  It comes in a couple colors but I love the RED!



THREE

Ok so last week I talked about my weekly menu planning and this week kicked off the first week of it.  One of the dinners on our menu was this Lighter Three Cheese Mac.  I cannot talk about this enough, it was SO GOOD!  Doug raved about it too, he even took leftovers for lunch the next day.   It's a must try!  YUM!


FOUR

Keith Urban!  Are there any other Keith Urban fans out there?!  Well, he is coming to Salt Lake City on August 30th and we are planning to take a little road trip to see him in concert again.  I am SO SO excited about this!  If you have not seen him in concert, DO IT!  Not to mention, he is pretty easy on the eyes too.  I think my hubby even has a man crush on him. ;)

This seriously has me laughing hysterically.  One of my Mom friends posted this on FB recently.  I had to share.

Menu Plan Monday

Happy Monday!
Hope you all had a fantastic weekend.

SO, I am trying something new in hopes to keep me more organized for meals during the week and also to help save some moola!  I have tried this so many times but fall off the wagon after a week.  I figured maybe if I blogged about it, it would help me stay on track and also share some of our favorite meals with you.  I love finding new recipes!!!  Blogs and Pinterest are great resources to find awesome recipes.

I love that menu planning can be flexible.  If we don't feel like eating what we have planned for a particular day, we can change it up with one of the other days!

Here's what we have cooking in our kitchen this week:
Monday:  Slow Cooker Pot Roast with Carrots and Red Potatoes - I have always used a recipe from allrecipes.com when it comes to Pot Roast but I thought I'd try this one by Paula Deen.  It smells so good in our house right now - we can't wait to try it.

Tuesday: Honey - Lime Sweet Potato Black Bean & Corn Tacos - These look amazing! We are huge sweet potato fans, so we are really looking forward to these.  I came across this on Pinterest.

Wednesday: BBQ Chicken Breasts grilled on the traeger along with this Lighter Three-Cheese Mac - We make chicken breasts all the time but the mac & cheese is a new recipe.  It looks yummy!

Thursday: Sophie's Chopped Salad - This is a staple in our house.  We've had this so many times, especially in the summer.  I've been craving a good salad lately though!  We use Kalamata Olives instead of the Nicoise Olives (they're pretty similar).  We also usually do without the tortilla strips.  Sometimes we will even add some chopped grilled chicken to it.  It's so good!

Friday: Papa Murphy's!  Friday night is our lazy night and we typically go grab a pizza, unless we have plans.  Once in awhile we'll go out.  Saturday and Sunday are up in the air as well.

~ ONE ~

This baby.  He lights up my life, on a daily basis.  I'm a lucky Mama.





~ TWO ~

The weather in Boise lately!  It makes me want to get out and run big time!  If only we lived closer to the best running trails.  I seriously hate running in our neighborhood, so running requires me to get in the car and drive to a destination, which cuts down time at home, etc.  It's tough but I make it work.  So excited for this upcoming year as I have some great goals for myself!  I've been trying to scope out which runs I'd like to do this next year and I'm getting really excited!





~ THREE ~

Weekly menu planning!  This is hard to do!  Not sure about you but this is something that I've tried time and time again and I'll do it for a week and then I fall off the wagon.  Boo.  I have found that this saves money, big time!  One of my New Year's resolution's was to stay on track with this.  So far I've done ok but I figured that maybe if I blog about it and post a weekly menu, maybe it'd be easier?  Some of my most favorite bloggers do this, so I figured, why not?!  It's also a fun way to get new dinner ideas.  

I'm starting on Monday - woot woot!


~ FOUR ~

Dreaming of a vacay like this again!  This was our honeymoon in Jamaica 2ish years ago.  Ugh.  I would LOVE, just LOVE to be anywhere tropical right now with Doug.

Today is Marshall's 1/2 Birthday!!!



I seriously cannot believe it!  How is that even possible?!  When people say to enjoy every minute because it goes by way too fast...they weren't kidding!  It saddens me to see him growing so fast but honestly,  it's so much fun.  Doug and I are both loving it.

Baby is boy 6 months and he talks and talks like crazy.  He's discovered his voice and oh my does he like to use it.  By the end of the night, I sometimes have a headache from all the screaming.  ;)  
He's a champ at eating his rice cereal.  We also have the green light to start on veggies, so we do plan to start hopefully this week yet.  

His new favorite toy is his Baby Einstein Activity Jumper that he got from Grandpa & Grandma for Christmas.  It's so cute watching him play - He loves it!



This Fisher - Price Infant to Toddler Rocker comes in handy now a days and he loves it!  He loves sitting in it while playing with some of his toys or watching us in the kitchen.  It's also come in handy when Mama needs to take a shower.  It's great for so many reasons.
He's started to squirm quite a bit while being fed his bottle.  He almost acts as if he doesn't want to be held.  :(  He's also pretty interested in holding his own bottle but still seems unsure.  So sometimes if he's really squirmy, I'll sit him in this chair and give him his bottle.


He has blessed our lives in so many ways and we are ever so thankful.  Looking forward to the next 6 months with this little sweetie.

A little late but...Our Wisconsin Trip Recap!

Happy New Year!

I seriously cannot believe that Christmas has come and gone and it's now 2014!

We spent our Christmas in Wisconsin this year with my family.  This was the first time my Dad had met baby Marshall and my Mom hadn't seen him since he was born back in July.  Oh how fun it was to show him off to all my family and friends!  Marshall is a lucky little guy to have so many people that love him.  We seriously had a blast but are definitely happy to be home in our house with all of our things.  I think Marshall is glad to be home too.  I think he missed his toys.  ;)

First off...Marshall did so great on his first flight!  It was just he and I on our way out to WI...Doug didn't fly in until a few days after us.  I felt like an awesome Mom once the travel day was over!  ;)



I had an awful Mom moment about my 3rd day there.  I was headed back to my parent's house after spending the day with a dear friend and I decided to stop off to grab some carry out.  Well, it was 5pm and a snow storm had started.  Somehow I ended up locking the keys in my Mom's car, along with Marshall.  I don't think I had ever been that scared in my life!  I literally went hysterically running into some vision shop next to Panera since it was closer.  In my mind I thought "Do I call 911?!"  But then remembered that my parents had the extra key, so I then called my Dad.  Yeah well, with the snow storm and rush hour, it took my Dad a good 30 minutes to get to me.  I was terrified.  Marshall was in the car, it was dark, cold and snowing.  I get worked up just thinking about it again.  I still cannot figure out how the heck it happened!  As I buckled him in the back, I must've set the keys down and the lock button must've been hit?  That's the only thing I can think of.  It was horrible, just horrible!  He was ok and all I could do was snuggle him all night long.  

We had so much fun the rest of the trip.  We got together with lots of friends and were able to see all my family!  Marshall saw Santa, we visited the Pabst where we got married, and Doug and I were even able to enjoy a date night!   

And of course we were able to bring some cheese home with us.  Not nearly enough though.  It's already time to place an online order!


Marshall's first time with Santa - he didn't even freak out!  It was so cute.

Since we were gone for the second half of December, we didn't even get a tree or put up any decorations.  Next year, I'm going crazy!
